I'd suggest adding more stadiums as opposed to opening up the ability to edit them. At the moment it looks as though there are 5-6 different ones that can be modified heavily but I'd imagine the best way to get closer to the authentic stadiums would be to actually model them. I know this takes time etc which at the current time in the development process is clearly better spent elsewhere.
